Has anyone run fast bleed lifters with a knock sensor? My engine (which is not in yet) has them and I am getting concerned with some of the stuff I have read.

I wouldn't recommend using the fast bleed lifters with a knock
sensor. The knock sensor will pick up the noise that they produce,
and the computer will retard the timing accordingly. Most of our
engines don't see the rpms where the fast bleeds are beneficial anyway.
Another reason people use them is to compensate for an oversized cam.

At what rpm do they become beneficial??? I plan on twisting my SII project to close to 7,000 (once built) ;)

I think around 6500. At 7000, you'll be on the borderline of most
hydraulic valve trains. Some will go a little higher. How much cam are you planning on running ? And what is your performance objective ?
Even so, you'll still have problems using a knock sensor. With the timing
that you'll lose, it'll probably cancel out what you would've gained and
then some.
