So you really need a grill with a rotissary (infared) burner to pull this off. It was an experiement last night that turned out pretty well.

1 Skinned Phesant
1 Egg
Flour
corn meal


Cut up the bird and dredge in flour seasoned with sage, Seasoned salt and lemon pepper.

Dip in the egg wash
Dredge again in flour and corn meal

Light the outer burners and the rotissarie. You want no direct heat under the bird. Keep turning it until the flour is brown and crusty.

It was. Frankly I didn't know how it would turn out but the wife doesn't like eating fried stuff any more and it worked out good.

And since we skinned the birds it kept them moist.
